Living off the land

When it comes to cooking, Søren Westh will stop at nothing to get his hands on really fresh ingredients.

And that includes scavenging frozen beaches at dawn for fresh seaweed and wandering woodlands of his native Denmark for mosses, tree roots or anything he can use to create new dishes.

For the last 10 years, this chef turned Nordic Explorer has been on a mission to revolutionise the way we look at sustainable food from remote and unusual places.

Søren’s drive and passion for food authenticity has seen him work with the Danish government to create diets for hospital patients and establish a Nordic Food Lab in Copenhagen.

Feeling hungry? Why not go for a walk and see what you can find – after enjoying this video of course.
